Reviving a forgotten favorite: The return of roasted potato dumplings
These dish is often enriched by a sense of sentimentality associated with traditional foods from our hometowns. My grandmother sparked our love for roasted dumplings in just this way. They were once regular features on some tables, but over time, they've been somewhat forgotten.

This dish is straightforward and flavourful, and it's also very economical to make. Some people enjoy it on its own, topping the potato dumplings with a generous portion of bacon and its rendered fat. Others serve it as a side dish to accompany other meals. In every variant, it tastes delightful and captivating with its simplicity.
Roasted dumplings are linked to roasting and scalding flour with potatoes. Though enjoyed in years gone by, they are now experiencing renewed popularity, and their preparation is becoming increasingly common. Type B or C potatoes, which are well-suited for this kind of dish due to their high starch content, are best suited.
Recipe for the dish
To prepare them, simply add wheat flour to the cooked potatoes, combine with flour, and serve with bacon fat. It's simple, affordable, and most importantly, very tasty.
Ingredients:
- 1 kilogram of potatoes,
- 5 tablespoons of potato flour,
- 1 teaspoon of salt,
- 280 grams of smoked bacon.
Preparation:
- Peel, wash, and cook the potatoes in salted water until soft.
- When the potatoes are almost fully cooked, drain some of the water (leave about 240 millilitres in the pot), and sprinkle the potato flour over the surface of the potatoes. Cover the pot and cook for a few more minutes until the flour swells. Do not stir the mixture.
- Mash the cooked potatoes with the flour into a uniform mass using a potato masher. The mass should be smooth and slightly sticky.
- Use two spoons to form small dumplings from the potato mass and place them on a plate.
- Fry the diced bacon in a pan until crispy.
Serve the prepared dish drizzled with bacon crumbles. You can add buttermilk or your favourite sauce. They also taste great when sliced and fried in a pan. Enjoy!
