Pâté without meat? It may sound challenging, but we assure you that this dish will win over everyone, even the staunchest fans of traditional meat flavours. This pâté, made from vegetables and legumes, is so delicious and aromatic that no one will believe it contains not a gram of meat. It stores excellently in jars, and its flavour only deepens with each passing day. How is it possible that something so simple can elicit such delight?

Usually, when we think of pâté, its traditional meat version comes to mind. This time, we will show you how to prepare a plant-based pâté that is not only tasty but also healthy. Its advantage lies in the simplicity of preparation and its ability to be stored in jars for a long time, ensuring you always have something delicious and ready to serve.

How to make meat-free pâté that will delight the family?

The base of our pâté will be vegetables and legumes, such as lentils, chickpeas, or beans. These give it the right consistency and nutritional value. To ensure the pâté has the right structure and taste, we will also add nuts, millet, and spices to enhance its aroma. We bake it in jars, making the pâté easy to store. It works great as a spread for sandwiches or a side dish for dinner.

Ingredients:

  • 1 cup of cooked lentils,
  • 1 cup of cooked millet,
  • 1 carrot,
  • 1 onion,
  • 2 cloves of garlic,
  • 100g walnuts,
  • 1 tablespoon of marjoram,
  • Salt to taste,
  • Pepper to taste,
  • 1 teaspoon of olive oil.

Contrary to appearances, vegetarian and vegan versions of pâté are not new. Plant-based dishes, such as almond paste pâté, appeared on old tables.

Preparation:

  1. In a heated pan, sauté the onion and garlic in olive oil until golden. Add the grated carrot and fry for a few more minutes.
  2. Then, put the cooked lentils, millet, walnuts, and sautéed vegetables into a bowl. Blend everything into a smooth paste, adding spices to taste.
  3. Transfer the finished paste into sterilised jars, leaving some space at the top to allow the pâté to rise during baking.
  4. Screw the lids on the jars and bake in an oven preheated to 180°C for about 45 minutes.

The perfect pâté for storing – what to pay attention to?

Storing pâté in jars is an excellent solution that allows us to enjoy it for longer. After baking, remove the jars from the oven and let them cool completely. Thanks to this, the pâté can be stored in the refrigerator for several weeks or even a month. It is perfect on sandwiches but also as a snack or addition to a salad.
