  • 0.7 kg of young zucchini
  • 1 litre of broth or light stock
  • 1 onion

  • 80 ml of heavy cream
  • Salt, pepper, a pinch of curry, and hot paprika
  • Croutons or puffed peas for serving

Preparation:                                          

  1. Melt 2 tablespoons of butter in a thick-bottomed pot.
  2. Add the diced onion and sauté until translucent.
  3. Add the garlic and sauté for a moment.
  4. Add the washed and diced zucchini.
  5. Sauté everything for about 5-7 minutes.
  6. Reduce the heat, add the broth, and crumbled feta cheese.
  7. Cook for about 20 minutes until the zucchini softens.
  8. Add the cream and blend everything into a smooth cream using an immersion blender.
  9. Season the soup to taste with salt, pepper, curry, and hot paprika.
  10. Cook for another 5 minutes.
  11. Serve the soup with croutons or puffed peas.
