Baking bread is often associated with something that requires a large amount of time and patience. Additionally, many people think it requires a significant amount of skill and a good starter. The world of baking hides many tasty recipes that even an amateur can handle. One of them is a simple bread without flour, yeast, and starter. Its base is yoghurt and seeds. It’s perfect for when you run out of bread at home and don’t have the time or desire to rush to the bakery.
Quick bread without starter and yeast
This is the simplest homemade bread recipe I know. Just combine natural yoghurt with oats, your favourite seeds, a little honey, and bicarbonate of soda. It’s perfect as a base for classic sandwiches or as a side for soup. Most importantly, you don’t have to wait for it to rise—start baking straight away.
Each bite is packed with flavour because the base is a variety of seeds and nuts. You can customise the mix of ingredients and proportions according to your preferences. It’s healthy, quick, and truly delicious. Oats, seeds, and nuts provide the body with fibre, vitamins, minerals, and healthy fats. Natural yoghurt is a source of protein and probiotics that benefit the digestive system. When I take this bread out of the oven, everyone waits impatiently for it to cool down.
You can use either natural or Greek yoghurt. Greek yoghurt will give the bread a denser consistency. Bake the bread in a loaf tin with dimensions of about 20x9cm.
Ingredients:
- 500g natural yoghurt,
- 300g oats,
- 1 cup mixed seeds and nuts (e.g., pumpkin, sunflower, walnuts, chia, flax),
- 1 teaspoon honey,
- 1/2 teaspoon salt,
- 1 teaspoon bicarbonate of soda.
Preparation:
- In a large bowl, combine yoghurt, oats, seeds, nuts, honey, salt, and bicarbonate of soda. Mix thoroughly until all ingredients are combined.
- Transfer the mixture to a loaf tin lined with parchment paper. Smooth the surface, pressing gently.
- Bake in a preheated oven at 170°C for about 50 minutes.
After baking, remove the bread from the tin and let it cool completely on a rack. Then slice and serve. Enjoy!
