I love desserts that can be prepared in a few minutes without spending long hours in the kitchen. This is the ideal solution for days when I don't feel like cooking, baking, and washing up. The sweet finishing touch is a delicious pistachio paste with white chocolate, which can be eaten straight from the jar.
Puff pastry biscuits
Puff pastry is a very convenient aid in the kitchen. It is easily accessible, inexpensive, and versatile, as it can be prepared sweet and savoury. It's worth having a simple puff pastry biscuits recipe in your notebook. They always turn out well and taste heavenly.
Homemade pistachio paste
The crowning glory of these biscuits is delicious pistachio paste. Making it at home is not difficult, and it's more cost-effective than many shop-bought options. All you need is a good blender, and you're set. It works great not only as a biscuit topping but also as a sandwich spread or crêpe filling.
Recipe for puff pastry biscuits
These biscuits are simple to make, so even a novice can handle them. They are a big hit in my home and quickly disappear from the plates.
Ingredients:
Pistachio paste:
- 200g of pistachios
- 2 bars of white chocolate.
Other ingredients:
- 1 puff pastry sheet
- 3 tablespoons of sugar
- 1 teaspoon of cinnamon
- raspberries, blueberries.
Preparation:
Step 1. Put the pistachios in a blender and grind until a relatively smooth paste forms. Transfer to a bowl and mix with the melted chocolate.
Step 2. Unroll the puff pastry on the counter and cut it into strips. Roll each strip into a roll. It's a good idea to remove the puff pastry from the fridge 10 minutes earlier - when it reaches room temperature, it will be more pliable.
Step 3. Place the rolls on a baking tray lined with parchment paper and slightly flatten them. Bake at 200°C for 15 minutes.
Step 4. Mix the sugar with the cinnamon and coat the baked biscuits in it. Serve with the prepared pistachio paste or chocolate. Enjoy!
