Not so long ago, this interesting green plant was used by chefs solely for decorating their dishes. Today, we already know that pea shoots are more than just a garnish. They are condensed in a small form of health: vitamins, minerals, and more.

Pea shoots combine an interesting taste and nutritional value. Unlike some sprouts available on the market, pea shoots are characterized by a pleasant juiciness, so many chefs have decided to create something more than just a decoration for the dishes they serve. And rightly so, these sprouts greatly benefit the human body's function. And what exactly do we owe them? We explain everything now.

Pea shoots - characteristics

The shoots grown from pea seeds, adorned with "whiskers," are an excellent source of basic vitamins and minerals. They contain plenty of vitamin C and B, K, and A. They also do not lack magnesium, iron, potassium, and calcium. It's worth noting that these properties come with low calories, as pea shoots have only about 83 calories per 100 grams of the product.

Pea shoots, which are also characterized by a low glycemic index and a high protein content, also provide the body with fibre (making the shoots a good addition to a weight loss diet) and antioxidants. Antioxidants from pea shoots (carotenoids and flavonoids) slow down the skin's ageing process, have anti-inflammatory effects, and even support cancer prevention.

Pea shoots - how to use them?

Pea shoots are currently easily available, often found even in regular grocery stores and supermarkets. They can also be seen in greengrocers shops and organic food stores.

Pea shoots are an exceptional addition to various salads, enriching their flavour and health benefits. Due to their high protein content, pea shoots are a strong support for a vegetarian diet. They can be added to sandwiches, are an interesting ingredient in dumpling stuffing or pâté, and can also be eaten raw. Instead of snacking on salty sticks or fries while watching a movie, it's much better to opt for them!
