Oat bran pancakes: A nutritious twist to your breakfast routine

Breakfast pancakes have recently become associated primarily with cottage cheese or oatmeal. However, there is another ingredient worth considering for your kitchen cupboards, offering a filling, healthy, and light breakfast alternative: oat bran.

Oat bran is a fibre-rich product that doesn’t have to be linked to a boring meal of dry bran tossed into yogurt. On the contrary, it is suitable for a variety of dishes, from breakfasts to baked goods, making it an excellent way to enhance your daily diet with valuable nutrients. Oat bran pancakes, unlike cottage cheese pancakes, contain more fibre and less protein, so these two recipes can be used interchangeably.

Why is it worth eating oat bran?

Often considered an element of weight-loss diets, oat bran helps reduce appetite and prolongs the feeling of fullness. This makes it an excellent addition to meals for those mindful of their figure and weight control. Thanks to fibre, it regulates bowel movements and helps prevent constipation. Its consumption supports the digestive system’s functions and helps stabilise blood sugar levels due to the presence of beta-glucan. Regular consumption may reduce the risk of intestinal diseases and digestive issues.

Recipe for oat bran pancakes

Only four ingredients, zero fat, and a few moments of frying. Oat bran pancakes can be served both savoury and sweet; however, they taste best when served hot.

Ingredients:

  • 5 tablespoons of oat bran,
  • 60 grams of natural yogurt,
  • 1 small egg,
  • a pinch of salt,
  • 60 grams of raisins.

Preparation:

  1. Pour the oat bran into a bowl and mix it with the yogurt and egg yolk.
  2. In a separate bowl, beat the egg white with a pinch of salt until stiff.
  3. Gently fold the egg white into the pancake batter.
  4. Finally, add the raisins and mix again.
  5. Fry on a well-heated non-stick pan.
  6. Serve warm with homemade jam or preserves.
