Don't ruin the taste of sauerkraut

Even when you buy the best sauerkraut, its taste can be spoiled by improper cooking. It should be cooked until the cabbage is soft but not overdone, while retaining its strong aroma. Cooking this pickled food requires just 20 minutes; cooking it any longer will strip it of character and flavour. It's important to remember this, as we often leave it in boiling water for too long.

Add a few spices

Sauerkraut is ready to eat and doesn't require lengthy cooking. To soften its sourness, it can be rinsed under running water. If your cabbage is particularly sour and its taste too strong, you can add some shredded fresh cabbage to balance it out. Ideal spices for cabbage include bay leaves, allspice, juniper berries, and black pepper, as they enhance the depth of flavour and aroma.

It complements many dishes well and also offers several health benefits. Cabbage provides vitamins and minerals that support good health, and contains fibre that aids digestion.
