  • 4 eggs,
  • 115g butter,
  • 115g sugar,
  • 2 lemons (juice and zest),
  • 220g plain flour,
  • 1 teaspoon of baking powder.

For the decoration:

  • 1 lemon,
  • 220g icing sugar.

Instructions:

  1. Ensure all ingredients are at room temperature.
  2. Beat the egg whites until stiff peaks form.
  3. Mix egg yolks with soft butter and sugar until fluffy. Add lemon zest and juice.
  4. Combine the flour with baking powder and gradually add to the egg mixture, stirring gently.
  5. Carefully fold in the beaten egg whites.
  6. Transfer the batter to a pan and bake in an oven preheated to 170°C for about 40 minutes.
