Recipe for coleslaw with horseradish

Ingredients:

Slaw:

  • Half a head of white cabbage,
  • 1 carrot,
  • 1 medium onion (white or red),
  • 1 tablespoon chopped parsley (can be dried),
  • 1 flat teaspoon of salt.

Dressing:

  • 2 to 3 tablespoons of mayonnaise or plain yoghurt,
  • 2 to 3 tablespoons of milk,
  • 1 tablespoon of sugar,
  • 1 tablespoon of white wine vinegar,
  • Juice from half a lemon,
  • 1 flat tablespoon of strong horseradish,
  • A pinch of freshly ground pepper.

Preparation:

  1. Finely shred the cabbage and place it in a large bowl, add salt, mix, and let it stand for 10 minutes to soften.
  2. Coarsely grate the carrot, dice the onion finely, and add the carrot, onion, and parsley to the cabbage.
  3. In a separate bowl, mix all the dressing ingredients (mayonnaise or yoghurt, milk, sugar, vinegar, lemon juice, horseradish, and pepper) until smooth.
  4. Pour the dressing over the vegetables and mix thoroughly to combine all the ingredients.
  5. Refrigerate for at least 30 minutes to allow the flavours to meld. Serve as a side dish with meats, fish, or grilled dishes.
