Herring salad makeover: Pickled onion steals the show
Herring salad can be prepared in a variety of ways. One of the more popular versions includes beets. However, you could get creative by adding an unconventional ingredient next time. It usually doesn't feature in the classic recipe, which is a shame, as it significantly enhances the salad's flavour.
Herring is a type of fish that is often featured at gatherings in numerous forms. One such form is a salad with the addition of beets—a popular, impressive, and straightforward recipe. I also adore it, but I enjoy experimenting with other versions. There's one straightforward method that I particularly favour.
What does this trick involve? It's nothing complex; it simply involves using pickled red onion. Vegetables, a mixture of apple cider vinegar, water, salt, and sugar, add character and a unique taste to the salad. The recipe is not difficult, and apart from using pickled onion, it is not especially innovative. However, it's worth highlighting the presence of an apple—another ingredient that is indispensable in this recipe.
Herring salad with beets and pickled onions
Ingredients:
- about 400 grams of herring fillets,
- 2 medium-sized beets,
- 3 eggs,
- pickled red onion (approximately half a head),
- 2 pickles,
- 1 apple,
- 2 tablespoons mayonnaise,
- 3 tablespoons Greek yoghurt,
- 1 tablespoon mustard,
- chives,
- salt,
- pepper.
Preparation:
- Bake the beets in foil (about 70 minutes at 200°C), cool, gently peel, and cut into cubes.
- Cut the herring into the same-sized pieces (if they are salted, you may need to soak them in cold water first).
- Also, cut the hard-boiled eggs and chop the pickles and apples a little finer.
- Transfer everything to a bowl. Add pickled red onion, chopped chives, mayonnaise, and Greek yoghurt.
- Season to taste with salt and pepper.
- Put it in the fridge—this salad tastes cold and requires some time for the flavours to meld.
