For those seeking healthier alternatives, millet apple pie is the ideal solution – made with millet without added sugar and flour. This version is tasty and full of nutrients that help maintain a healthy diet. The cake is light and delicate thanks to millet, and the apples add natural sweetness.

Millet apple pie is the perfect dessert for those who want to enjoy the taste of sweets without excess calories and sugar. Millet is easy to digest, gluten-free, and rich in B vitamins, iron, magnesium, and fibre. Apples provide natural sweetness and are a source of pectin, which aids digestion. Recipe for millet apple pie without sugar and flour

This apple pie is a perfect solution for people on a diet, diabetics, and everyone who wants to reduce their sugar and white flour intake.

Ingredients:

  • 250 grams of millet,
  • 4 apples – preferably tart, e.g., Grey Renette,
  • 1 teaspoon of cinnamon,
  • 1 tablespoon of honey,
  • 2 eggs,
  • 250 millilitres of plant-based oat milk,
  • 1 teaspoon of baking powder,
  • 1 teaspoon of vanilla extract,
  • 20 grams of raisins,
  • a pinch of salt.

Preparation:

  1. Rinse the millet under running water, then cook in two cups (500ml) of water with a pinch of salt for about 15 minutes until soft and all the water is absorbed. Set aside to cool.
  2. Wash, peel, and slice the apples thinly or grate them on a coarse grater. Mix with cinnamon and honey (or maple syrup). You can also add a handful of raisins for extra natural sweetness.
  3. In a large bowl, mix the cooled millet with eggs, plant-based milk, baking powder, and vanilla extract. Stir until a uniform consistency is achieved.
  4. Line a baking pan (approx. 24 cm in diameter) with parchment paper or grease with coconut oil. Pour half of the millet mixture into the bottom of the pan, spreading it evenly. Place the apple layer on top, then cover with the remaining millet mixture.
  5. Bake in an oven preheated to 180°C for about 40-45 minutes until the top is lightly golden and crispy.
  6. After baking, allow the cake to cool. Millet apple pie tastes best warm, but also cold as a healthy dessert or snack. It can be served with natural yoghurt or coconut whipped cream.

Additional tips:

  • Experiment with fruits: besides apples, you can add other fruits to the apple pie, such as pears, plums, or berries, to give it a variety of flavours.
  • Egg substitutes: if you want to make a vegan version, you can replace the eggs with chia seeds or flaxseed (1 tablespoon seeds + 3 tablespoons water per 1 egg), while honey can be successfully replaced with agave syrup or maple syrup.
  • Serving and decoration: millet apple pie can be served with natural yoghurt, coconut whipped cream, or sprinkled with cinnamon and nuts.
