French green beans: A summer delight with health benefits
Green beans are the taste of summer, and you should enjoy them during the season. Although the most popular version is green beans with breadcrumbs and butter, the French rendition will quickly win over the hearts of family and guests.

When I think of French-style green beans, my stomach immediately starts growling. I most often serve them with roasted or boiled potatoes and a fried egg. This combination is the epitome of a summer dinner.
Green beans and health
Green beans are a light snack and a delicious addition. They are a rich source of dietary fibre, which regulates the digestive system. They are also low in calories, making them perfect for a diet. Green beans have a low glycaemic index, which is appreciated by people dealing with diabetes and insulin resistance. They also contain vitamins and minerals such as potassium, magnesium, phosphorus, iron, vitamins C, K, A, and B-group vitamins.
French-style green beans
Green beans can be served differently than we have known for years. The recipe for the French version of this dish has recently taken over my home and family's taste buds. A simple change made the green beans disappear from the plates the fastest. From now on, I try to prepare a large bowl each time, which still quickly becomes empty.
Ingredients:
- 300 grams yellow green beans,
- 20 grams butter,
- 2 tablespoons olive oil,
- 1 medium shallot,
- 1 clove garlic,
- 80 millilitres chopped parsley.
Add-ons:
- young potatoes,
- fried egg.
Preparation method:
Step 1. Place the yellow-green beans in boiling, salted water and cook until soft. Then, immediately transfer them to a bowl with cold water and ice cubes.
Step 2. Add the butter and olive oil to the pan. Add finely chopped shallot and pressed garlic, and sauté.
Step 3. Add the green beans and chopped parsley and sauté everything.
Step 4. Fry the egg in the pan, cook the young potatoes, and roast them in the oven. Serve alongside the French-style green beans. Enjoy!
