Fava bean and potato patties: A seasonal vegetarian delight

When I see a bag of green, firm fava beans at the stall, I can't imagine not buying at least one portion. The season is relatively short, so I try to eat a lot of this vegetable while it's available, hoping I won't miss it too soon. Boiled fava beans with butter, garlic pressed through a garlic press, and salt are especially popular, but this vegetable has even greater potential.
Fava bean and potato patties - a vegetarian dinner
Fava beans are rich in plant-based protein, which is perfectly complemented by the carbohydrates from potatoes. As a legume, they also contain a significant amount of fibre, which makes the patties filling and provides lasting energy. Fava beans give them a slightly sweet taste that goes well with potatoes. It's worth cooking an extra portion of potatoes for dinner the day before, which can be used to make fava bean patties. This significantly cuts down on meal preparation time.
You can serve them as a main dish with your favourite sides, such as coleslaw or sauce, or as a snack. They taste so good that no one will miss the classic minced meat patties. It's the light taste of summer encapsulated in vegetarian patties.
Recipe for vegetarian patties
This recipe proves that vegetarian cuisine can be delightful. All it takes is the right selection of ingredients, as in this recipe for fava bean and potato patties.
Ingredients:
- 450 grammes of fresh fava beans,
- 3 medium potatoes,
- 1 onion,
- 2 cloves of garlic,
- 1 egg,
- 2 tablespoons of breadcrumbs,
- 2 tablespoons of olive oil,
- 1 bunch of dill,
- salt and pepper to taste,
- oil for frying,
- 5 tablespoons of grated yellow cheese.
Preparation:
- Peel the cooked fava beans. Cook and peel the potatoes. Press the vegetables through a potato ricer.
- Sauté the finely chopped onion and garlic in oil.
- Add the sautéed onion, garlic, chopped dill, egg, breadcrumbs, and grated cheese to the bowl with mashed fava beans and potatoes.
- Season with salt and pepper to taste. Mix everything thoroughly.
- Form patties from the mixture and coat them in breadcrumbs.
- Fry the patties on both sides in hot oil until golden brown.
Serve the ready patties with your favourite coleslaw. Enjoy your meal!
