Creamy horseradish soup - ingredients:

  • Just under 1 litre chicken or vegetable broth,
  • 1 onion,
  • 2 carrots,
  • 1 leek,
  • 2 cloves of garlic,
  • 1 tablespoon of butter,
  • 2 tablespoons of grated horseradish,
  • 2-3 potatoes,
  • 3 tablespoons of sour cream,
  • 3 raw white sausages,
  • marjoram to taste.

Optional:

  • boiled eggs for serving.

Instructions:

  1. Wash and dice all the vegetables.
  2. Heat the butter in a pan and add the chopped onion. Once it softens, add the remaining vegetables and garlic. Sauté everything over low heat.
  3. Transfer the vegetables to a pot with the broth. Then add diced potatoes to the soup, reduce the heat, and add the whole raw sausage. Season with marjoram.
  4. Cook until the potatoes are tender. Remove from the heat and add cream mixed with a few tablespoons of the soup.
