Ingredients:

  • 3 onions,
  • 5 tablespoons of olive oil,
  • 40g of butter,
  • 2 dried chili peppers,
  • 2 cloves of garlic,
  • 120ml of pasta water,
  • roughly 240ml of 18% cream,
  • 80ml of flat-leaf parsley,
  • 300g of cooked spaghetti pasta.

How to prepare:

Step 1. Prepare the onions, the foundation of this dish. Peel them and slice them into thin pieces.

Step 2. Mix the olive oil and butter in a preheated pot. Shortly after, add the prepped onions to the pot and sauté until they turn golden brown.

Step 3. Next, add dried chili peppers, finely chopped garlic cloves, and about 120ml of water from the cooked pasta to the pan. The pasta water helps the sauce and pasta merge flawlessly.

Step 4. Remember the cream, which lends the sauce a creamy texture. I also add finely chopped fresh parsley to the mix. Let it simmer for a bit until the onion sauce thickens nicely.
