Cucumber salad typically takes a simple form and looks almost identical in every home. Variations are usually minor, often just in the spices used (some prefer it sweeter, others saltier) or the presence or absence of white or red onions.

Today, however, we'd like to introduce a considerable change to these traditional grounds. We're talking about the cucumber salad ingredients, which we'll modify slightly. How? With the help of two ingredients that will make the salad lighter, perfectly fitting into a refreshing summer menu.

The first of these ingredients is mint. This is not our invention, as combining cucumbers with mint is standard in Turkey. The second addition to the cucumber salad is Greek yoghurt, which will replace the more commonly used sour cream. The result? Freshness, for one, and two, added health benefits. Our salad just got a healthy upgrade. So it's worth trying!

Cucumber salad reimagined

Ingredients:

  • 2 green cucumbers,
  • 85 grams of Greek yoghurt,
  • 2 tablespoons of 12% sour cream,
  • 1 tablespoon of lemon juice,
  • a bunch of dill,
  • a few mint leaves,
  • sugar, pepper, and salt to taste.

Preparation:

  • Peel the cucumbers and slice them. You can do this with a knife or a mandoline slicer.
  • Place the sliced cucumbers in a bowl. Add Greek yoghurt, sour cream, and a bit of lemon juice. Then add chopped dill and torn mint leaves.
  • Season the mixture to your liking with sugar, pepper, and salt. Mix thoroughly. Chill the salad in the fridge before serving, as cucumber salad tastes best when cold, especially in summer. Enjoy!
