Ingredients for steak with chips for 2 people
Ingredients:
- 4 medium potatoes cut into sticks about 6 mm thick,
- 60 ml olive oil,
- Sea salt and pepper to taste,
- 1/2 teaspoon dried oregano,
- 1 package (450 g) beef fillet (remove from the fridge 30 minutes before cooking),
- 40 g butter, cubed,
- 2 cloves of garlic, in skins, gently crushed,
- 6 sprigs of fresh thyme.
Simple Salad:
- 1 package of salad mix with lamb's lettuce,
- 4 radishes, sliced,
- 1 tablespoon white or red wine vinegar,
- 1 teaspoon Dijon mustard,
- 1 teaspoon honey,
- 2 tablespoons extra virgin olive oil,
- 1 tablespoon chopped chives.
Preparation method:
Step 1: Preheat the oven to 180 degrees Celsius. Place the sliced potatoes on a baking sheet lined with parchment paper, drizzle with olive oil (45 ml), add a pinch of salt and oregano. Gently mix and then bake for 30-40 minutes until golden and crispy.
Step 2: Pat the steaks dry with a paper towel, season with a pinch of salt, and rub with the remaining 15 ml of olive oil. Heat a large pan over medium heat and cook the steaks for 3 minutes on one side until browned. Flip the steaks, add butter, garlic, and thyme. Tilt the pan and baste the steaks with butter for 2-3 minutes until aromatic and cooked to your liking. Remove the steaks from the pan and let rest on a wooden board for 3-4 minutes. Reserve the garlic-thyme butter as it will be needed shortly.
Step 3: Mix vinegar, mustard, honey, olive oil, and a pinch of salt and pepper. Toss the salad and radishes in the dressing, then transfer to a bowl.
Step 4: Slice the steaks and arrange on a plate. Add the chips from the oven, and top with the garlic-thyme butter. Serve with the simple salad on the side.
