Cottage cheese muffins: The perfect quick morning snack

Muffins are among the easiest baked goods. They are associated with children because they are often served at birthdays and are easy to eat even without a plate. Both younger and older sweet-tooth will certainly enjoy muffins with the addition of cottage cheese. They have a pleasant cheesy flavour, and the apples add freshness.
Cottage cheese is ideal for baking
Cottage cheese from our local dairies is so delicious that it’s often irresistible, and we buy the whole block. However, it can be difficult to eat that much for breakfast. That's when it's best to use it for baking. It works perfectly in cheesy muffins.
Thanks to it, they stay fresh longer
In a cheesecake, cottage cheese plays the main role. However, it can be used not only for this type of baking or as a filling for pastries. When we have less cottage cheese, we can use it in cakes. This addition makes the cake more moist and prevents it from drying quickly. In the case of muffins, this is important because you can prepare them for several days. Another reason to use it? Adding cottage cheese to the batter can use less butter, margarine, or oil. As a result, the baked goods are simply lighter.
Cottage Cheese Muffins with Apple
Ingredients:
- 250g cottage cheese,
- 4 eggs,
- 900g apples, the best are tart,
- 140g sugar,
- 1 teaspoon vanilla extract,
- 60ml vegetable oil,
- 300g plain flour,
- 2 teaspoons baking powder,
- Icing sugar and cinnamon are optional for decoration.
Preparation method:
- Peel the apples, remove the cores, and slice them thinly.
- Mash the cottage cheese with a masher. Beat the eggs with sugar until pale and fluffy, for 5 to 7 minutes. Add vanilla, cottage cheese, and vegetable oil. Mix gently.
- Add flour and baking powder and mix again (at low mixer speed) until combined.
- Add about two-thirds of the apples to the mixture and mix with a spoon.
- Place the batter into muffin moulds. Place the remaining apples on top, gently pressing them into the batter.
- Place the muffins in a preheated oven and bake for about 25 minutes (until a toothpick comes out clean) at 180 - 200°C.
- You can decorate the muffins with icing sugar or cinnamon.
