When I'm seeking the perfect side dish for dinner, I opt for something light, healthy, and full of flavour. A coleslaw made from fresh vegetables hits the spot! It combines the crunchiness of cabbage, the sweetness of carrots, and the delicate spiciness of leeks, with a creamy dressing to tie it all together. This versatile recipe pairs well with both meat and vegetarian dishes.

Coleslaw – the key to tasty meals

There's nothing simpler yet more impressive than a well-prepared coleslaw. My favourite combination is a mix of white cabbage and Chinese leaf, which bring lightness and crunchiness. Carrots and celery add a touch of natural sweetness, while leeks provide a subtle, spicy note. The entire salad is highlighted by a creamy dressing made from Greek yoghurt and honey mustard, which blends all the flavours perfectly.

What makes this slaw so special? The right selection of ingredients and simplicity of preparation. Thanks to this, it is a universal side dish that goes excellently with roasted chicken, fried cod, and vegetarian dishes like chickpea patties.

Recipe for a coleslaw that delights with flavour

Ingredients for the coleslaw:

  • Half a head of white cabbage,
  • 280 g Chinese leaf,
  • 280 g carrots,
  • 100 g celeriac,
  • The white part of a leek.

Ingredients for the dressing:

  • 50 g Greek yoghurt,
  • 2 teaspoons honey mustard,
  • 1 clove of garlic,
  • 1/2 teaspoon salt,
  • 1/4 teaspoon black pepper.

Preparation method:

  1. Wash and dry all the vegetables thoroughly. Shred the cabbages into thin strips, grate the carrots and celeriac, and slice the leeks into half-moons.
  2. Mix all the sauce ingredients in a bowl until smooth.
  3. Combine all the prepared vegetables in a large bowl. Pour the prepared sauce over them and mix thoroughly.
  4. Cover the bowl with cling film and refrigerate for at least an hour to allow the flavours to meld.

Variations on Copenhagen coleslaw

The classic recipe for Copenhagen coleslaw can be modified according to your preferences. Here are a few ideas:

  • Fruity touch: Add chopped apple or pear to the coleslaw for a sweet flavour.
  • Spicy accents: If you enjoy spicy flavours, add a touch of chili or cayenne pepper to the dressing.
  • Nuts and seeds: Sprinkle the coleslaw with toasted walnuts, pumpkin seeds, or sunflower seeds for added crunch.
  • Green additions: Add a handful of fresh herbs, such as parsley, coriander, or dill, to the coleslaw.
