  • 2 kg of marrow bones,
  • 500 g of chicken giblets,
  • 4 litres of water,
  • 2 parsley roots,
  • 3 carrots,
  • 1 onion,
  • half a celery root,
  • 2 tablespoons of apple cider vinegar,
  • salt and pepper to taste.

Preparation

  1. Thoroughly wash the meat – Start by thoroughly washing the meat that will be the base of your soup. The meat is key to a collagen-rich broth.
  2. Cook the meat – Put the meat into a pot, add a bit of apple cider vinegar, and start cooking on low heat. When the broth starts to boil, reduce the heat to a minimum and continue cooking for at least 4 hours.
  3. Add vegetables – About halfway through cooking, add the prepared vegetables: parsley roots, carrots, onion, and half a celery root. The vegetables will give the broth additional flavour.
  4. Add spices – At the very end of cooking, add salt and pepper to taste. You can also add other favourite spices to enrich the broth's flavour.
  5. Strain the broth – When ready, strain it through a sieve or cheesecloth to remove any leftover meat and vegetables. The collagen broth is ready to consume. Enjoy!
