Bon appétit to health: simple and nutritious homemade pizza with a lentil base

Lentils don't particularly bring to mind pizza, but they serve perfectly as a delicious and healthy base. This recipe will also become a favorite among those who have had to exclude gluten from their diet. The lentil base is crisp, flavourful, and packed with protein. Pizza dough has never been so easy to make without the need for rising, kneading, rolling, and stretching. It's straightforward, tasty and good for you!

Lentil pizza

Green and red lentils are true health gems! They help prevent atherosclerosis, hypertension, and anaemia. The potassium they contain helps regulate blood pressure, and the fibre lowers cholesterol. Although there's no harm in including traditional pizza in a balanced diet, it is worth adding a healthier version too.

Ingredients:

  • 300g red lentils,
  • 1-1.25 cups of water,
  • a pinch of salt,
  • tomato sauce,
  • your favorite toppings.

Instructions:

  1. Pour the lentils into the blender and add water.
  2. Add a large pinch of salt and blend everything into a uniform mixture.
  3. Line a baking sheet with baking paper and transfer the lentils, forming the pizza shape.
  4. Place it in a preheated oven at 180 degrees Celsius and bake for 15 minutes.
  5. After this time, remove the base from the oven, spread it with tomato sauce, and layer it with your favorite toppings, such as olives, mushrooms, and broccoli. Sprinkle the whole with grated cheese and put it back in the oven.
  6. Bake for approximately 10 minutes more.

Once ready, slice the pizza. Among the toppings, go with those you like best - I also enjoy adding slices of courgette and a bit of sweetcorn. It's delicious, simple and healthy. Bon appétit!
