Ingredients:

  • 6 eggs,
  • 1 red bell pepper,
  • 1 onion,
  • 2 tomatoes,
  • 100 g feta cheese,
  • 100 g fresh spinach,
  • 2 garlic cloves,
  • olive oil,
  • dried herbs (e.g., oregano, basil, thyme),
  • salt and pepper to taste.

Preparation:

  1. Slice the tomatoes, dice or slice the bell pepper, chop the onion and garlic, and cut the feta into cubes.
  2. Place the tomatoes, bell pepper, onion, and garlic in a baking dish. Add a splash of olive oil, dried herbs, salt, and pepper.
  3. Mix and bake in an oven preheated to 180 degrees Celsius for about 20 minutes.
  4. After 20 minutes, add the spinach and crumbled feta to the vegetables. Crack the eggs on top and gently mix them with the vegetables.
  5. Bake in the oven for another 10 minutes, until the eggs are set and the omelette is golden.

Serve the ready omelette warm, sliced into portions. You can garnish the omelette with fresh herbs such as parsley, dill, or chives.
