Recipe for tomato soup with mustard

Tomato soup with mustard is an excellent way to refresh a classic recipe and surprise your loved ones with a new flavour. Next time you prepare tomato soup, reach for a jar of mustard and discover how a small change can make a significant difference.

Ingredients (for 4 servings):

  • 1 litre of broth (chicken or vegetable),
  • 500 ml tomato purée (or one tin of diced tomatoes),
  • 2 tablespoons mustard (Dijon, French or honey – according to preference),
  • 1 medium onion,
  • 2 cloves of garlic,
  • 1 tablespoon butter or olive oil,
  • 1 teaspoon sugar (optional),
  • salt and pepper to taste,
  • cream or plain yoghurt (optional),
  • pasta, rice, or croutons for serving.

Instructions:

  1. Heat the butter or olive oil in a pot. Add the chopped onion and sauté until golden. Add the minced garlic and sauté for another 30 seconds.
  2. Pour in the tomato purée or add diced tomatoes and cook for 10 minutes over medium heat.
  3. Add the broth to a boil, then cook for 15 minutes over low heat. Stir in 2 tablespoons of mustard, bring it in and cook over low heat
  4. Mix thoroughly and cook for 2–3 minutes, seasoning with salt, pepper, and sugar.
  5. Serve with cream or yoghurt (if preferred), along with pasta, rice, or croutons.

Why add mustard to tomato soup?

  1. Enhances flavour – mustard contains vinegar and spices that perfectly balance the natural acidity of tomatoes, making the soup more distinct.
  2. Adds depth – the aromas in mustard enhance the broth's flavour and lend the dish character.
  3. Natural thickener – mustard's thick consistency gently thickens the soup, making it more velvety.
