Recipe for tomato soup with mustard

Ingredients (for 4 servings):
- 1 litre of broth (chicken or vegetable),
- 500 ml tomato purée (or one tin of diced tomatoes),
- 2 tablespoons mustard (Dijon, French or honey – according to preference),
- 1 medium onion,
- 2 cloves of garlic,
- 1 tablespoon butter or olive oil,
- 1 teaspoon sugar (optional),
- salt and pepper to taste,
- cream or plain yoghurt (optional),
- pasta, rice, or croutons for serving.
Instructions:
- Heat the butter or olive oil in a pot. Add the chopped onion and sauté until golden. Add the minced garlic and sauté for another 30 seconds.
- Pour in the tomato purée or add diced tomatoes and cook for 10 minutes over medium heat.
- Add the broth to a boil, then cook for 15 minutes over low heat. Stir in 2 tablespoons of mustard, bring it in and cook over low heat
- Mix thoroughly and cook for 2–3 minutes, seasoning with salt, pepper, and sugar.
- Serve with cream or yoghurt (if preferred), along with pasta, rice, or croutons.
