Simple buckwheat pancakes

Ingredients:
- 100g of buckwheat,
- 5 tablespoons of grated Parmesan cheese,
- 2 eggs,
- Salt and pepper to taste,
- Oil for frying.
Instructions:
- Cook the buckwheat in salted water until fluffy. It usually takes about 15 minutes for the water to start boiling.
- Drain the buckwheat, transfer it to a bowl, and let it cool.
- Add the eggs and grated Parmesan and season with salt and pepper.
- Mix thoroughly so that the ingredients combine.
- Heat oil in a pan and scoop portions of the mixture.
- Fry on both sides until the pancakes are golden brown.
