A healthy twist on pancakes: Buckwheat takes the lead

Pancakes are often associated with potatoes, but in this recipe, a completely different and even healthier ingredient takes centre stage. These pancakes are easy to prepare, healthy, and tasty.

Buckwheat pancakes are a well-tested recipe for an economical and nutritious meal. They only require a few simple ingredients, which you likely have in your pantry. They can be served with sauces, as an accompaniment to roasted meats, or simply as a quick snack.

Simple buckwheat pancakes

Although buckwheat is a treasure trove of health benefits, not everyone is fond of its taste. However, these pancakes are a straightforward way to incorporate them into your daily diet. Buckwheat is an excellent source of complete plant-based protein, and the fibre regulates the digestive system, improves intestinal peristalsis, and helps maintain a healthy weight. It is also rich in B vitamins, magnesium, phosphorus, and iron.

With a few simple ingredients, buckwheat transforms into delicious and nutritious savoury pancakes that will appeal to adults and children.

Adding Parmesan cheese beautifully enhances the flavour, adding a salty umami note. They taste great with mushroom sauce, tomato sauce, or sprinkled with spring onions.

Ingredients:

  • 100g of buckwheat,
  • 5 tablespoons of grated Parmesan cheese,
  • 2 eggs,
  • Salt and pepper to taste,
  • Oil for frying.

Instructions:

  1. Cook the buckwheat in salted water until fluffy. It usually takes about 15 minutes for the water to start boiling.
  2. Drain the buckwheat, transfer it to a bowl, and let it cool.
  3. Add the eggs and grated Parmesan and season with salt and pepper.
  4. Mix thoroughly so that the ingredients combine.
  5. Heat oil in a pan and scoop portions of the mixture.
  6. Fry on both sides until the pancakes are golden brown.

After frying, place on a paper towel to remove excess oil. Serve with your favourite accompaniments. They are perfect for lunch, dinner, or a quick work meal. Enjoy!
