Walnut honeycomb cookies with advocaat

Ingredients:
- 255 grams ground walnuts,
- 255 grams icing sugar,
- 1 egg white.
Filling:
- 60 grams butter,
- 85 grams icing sugar,
- 1 egg yolk,
- 60 millilitres advocaat.
Preparation method:
Step 1. Grind the walnuts into a fine mass. Add the egg white and icing sugar, then mix everything together.
Step 2. Form a ball from a portion of the mass and place it in the mould. If the mixture is too light, gently coat the dough with flour to prevent it from sticking to the mould. Press it well, making an indentation in the centre with a stick.
Step 3. Transfer the softened butter to a bowl, add icing sugar, and whisk, gradually adding the advocaat. Transfer the prepared mixture to a piping bag and fill the indentations in the walnut cookies.
Step 4. Cover the bottom of the cookies with a piece of wafer and place them on a large plate. You can additionally decorate them with icing sugar. Enjoy!
