Tortellini salad: A quick twist on a classic dish
Although tortellini is mainly associated with dinner, it tastes even better in a salad. It's colourful and so delicious that no one needs encouragement to have a second helping. It's the best salad for a party, a second breakfast, or a delightful dinner.

Sweet bell pepper, tender cucumber, crunchy corn, turkey ham, and delicious dumplings filled with ricotta and spinach make a simply perfect combination. If you've previously avoided tortellini or wondered how to serve it other than just boiled in water or pan-fried, this salad will be the perfect solution.
Tortellini and vegetable salad
This salad is a brilliant idea for a quick and tasty meal. It combines the delicate pasta of tortellini with the freshness of vegetables and a refreshing hint of sauce. It's excellent both as a standalone dish and as a side for a barbecue or dinner. Additionally, preparing it is really quick and simple.
Instead of turkey ham, you can use other deli meats, cooked chicken, smoked salmon, or tofu.
Ingredients:
- 300 g tortellini with spinach and ricotta,
- 1 red bell pepper,
- 100 g turkey deli ham,
- 1 small can of corn,
- 100 g lamb's lettuce,
- 1 green cucumber,
- Salt and pepper to taste,
- 3 tablespoons mayonnaise,
- 2 tablespoons Greek yoghurt,
- 1 clove of garlic.
Preparation:
Step 1. Wash the cucumber and slice it. Remove the seeds from the bell pepper and dice it.
Step 2. Dice the turkey ham as well. If using chicken, cut it into cubes and fry it. Simply tear the smoked salmon into pieces.
Step 3. Transfer the washed and dried lamb's lettuce to a bowl. Add the tortellini dumplings cooked according to the package instructions, corn, sliced cucumber, bell pepper, and ham. Season with salt and pepper.
Step 4. Add the garlic, pressed through a garlic press, mayonnaise, and Greek yoghurt. Mix thoroughly to combine the ingredients and ensure they are evenly coated with the sauce.
Step 5. Transfer the prepared salad to a bowl. Enjoy!
