Recipe for Toadstool Salad

The Toadstool Salad is an unconventional appetiser that brings a touch of humour and freshness to the table. Its striking appearance quickly makes it the star of any event, and its simplicity encourages its preparation for various occasions.

Ingredients:

  • 250g tortellini pasta (preferably with mushroom filling),
  • 170g marinated mushrooms,
  • 70g white part of a leek,
  • 140g red bell pepper,
  • 2-3 tablespoons mayonnaise (approximately 60-90g),
  • 2-3 tablespoons sour cream, 18% fat (approximately 60-90g),
  • 1 teaspoon mustard,
  • fresh dill,
  • dried garlic,
  • salt and pepper to taste.

Preparation:

  1. First, cook the tortellini in salted water as per the package instructions, ensuring they remain intact. Once ready, drain and transfer them to a large bowl to cool.
  2. Next, prepare the other ingredients. Cut the white part of the leek in half, rinse thoroughly, pat dry, then chop into small cubes. Add the leek to the tortellini and mix.
  3. Wash the red bell pepper, remove the seeds, and cut it into small cubes; chop the dill finely. Add both to the bowl with the pasta and mix everything together.
  4. Drain the mushrooms from the marinade, cut them into quarters, then add to the salad.
  5. In a separate bowl, prepare the dressing by mixing the mayonnaise, sour cream, mustard, salt, and pepper.
  6. Add the prepared dressing to the salad bowl and mix thoroughly to ensure all ingredients are well combined.
  7. Finally, season the entire dish with salt, pepper, and dried garlic, if needed. Refrigerate the salad for at least an hour to allow the flavours to meld together.

Additional tips:

  • The Toadstool Salad can be enhanced by adding diced pickles or radishes for more flavour variety,
  • you can also include a layer of finely chopped onion or chives for added zest.
