Yes, this dessert has no sugar, but I used a substitute. Perfect for a diet? Friends who struggle with extra pounds and follow a high-protein diet appreciate this baking.

When someone likes traditional cheesecake, just as I do, they must change their approach to this dessert. Skyrnik, which we write about today, is a completely different kind of baking. First of all, its base is not cheese but skyr. Thanks to this, it fits well into the assumptions of a high-protein diet.

Good for the figure

Skyr is a traditional Icelandic yoghurt made from cow's milk. Dietitians often recommend it for breakfast because it is very rich in high-quality protein and, additionally, low-calorie.

Thanks to these properties, skyr is very popular as a quick snack for people who care about their figure. Based on this, recipes for desserts have been developed that somewhat resemble or may relate in flavour to classic cheesecakes. They have fewer calories. You can even allow yourself a piece of skyr cake for breakfast or a snack.

Simple and delicious

The recipe for such a fit cheesecake is extremely simple. Even teenagers can handle it. To the yoghurt mass, you can add fresh fruits, e.g. strawberries or blueberries. However, in my opinion, they taste better eaten fresh along with skyrnik.

There is also no preparation of any crust or base made from crumbled biscuits for this bake. This way, there are fewer calories, but it can also be recommended to people who avoid gluten. Just like with the classic Viennese cheesecake, it's the mass itself – in this case, yoghurt.

Recipe for skyrnik

Ingredients:

  • 4 egg whites,
  • 4 yolks,
  • 800g skyr natural,
  • 110g xylitol (or sugar),
  • 1 vanilla pudding,
  • 1 teaspoon of vanilla extract optionally,
  • 1/2 teaspoon of baking powder.

Instructions:

  1. Whip the egg whites until stiff. Thoroughly mix the skyr, xylitol, pudding, extract, yolks, and baking powder.
  2. Add the whipped egg whites to the skyr mixture and gently fold them in.
  3. Line a form with the dimensions of about 28 x 18cm with parchment paper. Pour the skyr cake mixture into it. Bake it in a preheated oven at 180°C for about 40 minutes. Its top should be browned.
