A fresh take on oat flakes: introducing the baked oatmeal that echoes a yoghurt cake with crumble topping

This delight is fitting for any moment. Whether served at breakfast, lunch, dinner or as a quick snack, its rich fibre and protein content make it an excellent option for the health-conscious.

Ingredients:

  • 130 grams of natural skyr,
  • 45 grams of oat flakes,
  • 60 grams of banana,
  • 10 grams of white chocolate flavour protein powder (or alternatively, vanilla pudding mix),
  • Sweetener to taste,
  • 4 grams of baking powder,
  • 100 grams of apple (equivalent to a small apple),
  • Vanilla flavouring.

Crumble Topping:

  • 10 grams of butter,
  • 20 grams of flour,
  • 20 grams of sweetener (choice of xylitol, erythritol, or sugar),
  • A pinch of cinnamon.

Here's how simple it is to prepare:

  1. Blend the skyr, oat flakes, banana, protein powder (or vanilla pudding), sweetener, and baking powder until you achieve a smooth consistency.
  2. Peel the apple and chop it into small cubes. Stir these into the oatmeal mixture.
  3. Transfer the mix into a dish suitable for oven use.
  4. To make the crumble: mix the butter, flour, sweetener, and cinnamon until you get a coarse texture.
  5. Gently distribute the crumble atop the oatmeal cake.
  6. Bake for 20 minutes at 200 degrees Celsius.
