Do you enjoy cakes with intriguing additions? Make sure you try this one with sweet potatoes. Not only does it have an appealing colour, but it also tastes delightful and is very quick to prepare. It's definitely my favourite vegetable-based bake.

Bakes with added vegetables no longer surprise anyone. Everyone adores carrot cake, which often stands in for the traditional holiday gingerbread. Children love it as well. In the summer, we use courgette for desserts. Many of us have discovered that beetroot works wonderfully in brownies. Another vegetable that does marvellously in sweet dishes is the sweet potato.

What dishes are sweet potatoes suitable for?

Sweet potatoes, often referred to as yams, are classified as root vegetables. They have a distinctively sweet taste, making them ideal for both savoury and sweet dishes. The savoury category is definitely more popular. We use sweet potatoes in salads, soups, and stews. Sweet potato fries are also very popular. They are suitable for baking, boiling, and frying.

Sweet potatoes are packed with nutritional value

Sweet potatoes are not only delicious but also healthy, and they are even considered a superfood. They are packed with nutritional value. Their composition includes vitamins, minerals, and fibre. It's worth noting vitamins A and C, which boost immunity. Potassium is also important, as it positively influences blood pressure, along with minerals like calcium, magnesium, and iron. Sweet potatoes also support intestinal health, regulate digestive processes, and are excellent in weight-loss diets because they are low in calories and provide a long-lasting feeling of fullness.

Trick for a moist cake

Why is it worth baking a cake with sweet potatoes? During baking, they retain their valuable properties. They also contribute a unique flavour. They pair perfectly with nuts, raisins, or cranberries. The perfect spice for sweet potatoes is cinnamon. These vegetables also add moisture, so there's no chance of a dry cake, even after a few days. You can also prepare a chocolate glaze for such a cake.

Sweet Potato Cake

Ingredients:

  • 2 cups grated sweet potatoes,
  • 4 eggs,
  • half a cup of sugar, preferably brown,
  • 1 cup oil,
  • 2 cups flour,
  • 1 teaspoon baking powder,
  • 1 teaspoon bicarbonate of soda,
  • cinnamon to taste,
  • cardamom to taste, optionally,
  • cranberries to taste, optionally,
  • your favourite nuts to taste, optionally.

Method:

  1. Mix the eggs with sugar into a fluffy mixture using a mixer. Slowly add the oil while continuing to mix.
  2. Add the flour mixed with baking powder and bicarbonate of soda. Add the grated sweet potatoes along with your chosen additives and cinnamon. Gently mix the mixture.
  3. Pour the mixture into a baking tray lined with parchment paper.
  4. Bake the cake for about an hour at a temperature of 160 degrees Celsius.
