Simple and satisfying: Chicken thighs baked with rice
When I need to prepare a hearty dinner quickly, I always opt for this meat. It's even easier because the chicken is baked with rice in the oven. You only need to make a salad, and a tasty meal is ready without spending much time in the kitchen.

Whenever time is short, poultry is a good choice. Even chicken drumsticks, which take quite some time to bake, don’t require marinating. Simply rub them with spices and pop them into the oven.
Protein, vitamins, and much more
Chicken thighs are among the most popular types of poultry meat. The dark meat of the thighs contains more myoglobin, a protein that stores oxygen in the muscles, enhancing their function. This makes the meat darker in colour and richer in nutrients. Chicken thighs also provide B vitamins and vitamins A, C, and D. Thighs are a good source of iron, essential for oxygen transport in the body. Consuming dark poultry meat may also support brain and cardiovascular system function.
Delicious and economical
Chicken thighs can be used in many ways in the kitchen; however, baking is the most popular method. It is also convenient. There's nothing else to do once you put the thighs in the oven. Baked thighs are often considered the tastiest. Additionally, when baked with rice, they are incredibly filling and economical. Such a meal can satisfy the whole family. Towards the end of the baking, you can add leftover canned vegetables, which are often available after making salads. Corn, beans, or green peas work nicely.
Chicken drumsticks baked on rice
Ingredients:
- 8 chicken drumsticks,
- 200 grams of rice,
- 1 onion,
- hot and sweet paprika to taste,
- salt and pepper to taste,
- seasoning for poultry (optional).
Sauce:
- 1.5 litres of water,
- 225 grams of ketchup,
- pepper, salt, paprika to taste,
- a clove of garlic,
- a tablespoon of butter.
Instructions:
- Thoroughly rub the chicken drumsticks with spices. Leave them in the fridge for an hour if you have more time.
- Slice the onion into rings.
- Spread the rice evenly on the bottom of an ovenproof dish. Place the onion rings on top.
- Arrange the chicken drumsticks next.
- Bring the sauce ingredients to a boil. Finally, season it with spices.
- Pour it over the prepared chicken and rice.
- Bake the dish uncovered for about 1.5 hours at 180°C.
