Asparagus season is delightful and fleeting, making it essential to take full advantage of these flavorful vegetables in various dishes. Recently, I stumbled upon a simple yet exquisite asparagus and salmon bake recipe. Its outstanding taste is restaurant-quality, sure to impress any diner.

Salmon and Asparagus Bake is an ideal springtime meal. When I first prepared it, the table was filled with contented murmurs. The combination of tender salmon, crisp asparagus, and a creamy, aromatic sauce is bound to tantalize your taste buds.

Salmon and Asparagus Bake

This bake pairs crispy green asparagus with salmon, making for a delightful dinner or warm supper your family will adore. It's a refreshing deviation from the usual asparagus dishes like pasta or hollandaise sauce-covered spears. Not only is it satisfying and flavorful, but it is also straightforward to prepare.

Asparagus pairs wonderfully with spices such as nutmeg and herbs like basil, oregano, or thyme. Add a splash of white wine to the sauce for an even more distinctive flavour.

Ingredients:

  • 500 g of green asparagus,
  • 100 ml of milk,
  • 300 ml of 30% cream,
  • 1 red onion,
  • 5 ml of olive oil,
  • 100 g of Parmesan,
  • 2 sprigs of parsley,
  • 30 g of breadcrumbs,
  • A pinch of nutmeg,
  • 25 g of butter,
  • 1 clove of garlic,
  • 800 g of salmon fillet,
  • 1 teaspoon of salt,
  • Pepper,
  • Provence herbs.

Instructions:

  1. Mix the breadcrumbs with 25 g of grated Parmesan and chopped parsley.
  2. Finely chop the onion and crush the garlic. Sauté them in a pan with olive oil and butter, using an oven-safe pan.
  3. Continue sautéing until the vegetables are slightly brown.
  4. Add the cream, milk, and remaining Parmesan to the pan. Bring to a boil and simmer until the sauce becomes velvety—season with salt, pepper, nutmeg, and herbs to taste.
  5. Prepare the asparagus by washing and trimming off the tough ends, cutting them in half if necessary, and add to the sauce.
  6. Place the salmon fillets in the pan, skin side down.
  7. Cover everything with the breadcrumb mixture and bake in a preheated oven at 200°C (approximately 392°F) for 14-16 minutes, until the salmon is cooked and the breadcrumbs are golden brown.
