Salad surprise: Hearty autumn meal with kabanos twist

Do you think the salad season ended with summer? Think again. Admittedly, the selection of fresh vegetables is smaller now, but you just need to choose the right ingredients to still enjoy their taste. Recently, I tried one based on pasta with a special addition of cured meat.
Salad with cured meats
Finely chopped ham is often found in salads. This time, I opted for a different type of cured meat that is more commonly associated with a quick snack. Yes, I'm talking about kabanos sausages. Thinly sliced, they work brilliantly in a salad. However, remember to purchase the better-quality varieties. In the shop, pay attention to their ingredients. They should contain as much meat as possible and minimal preservatives.
No snacks needed
Kabanos sausages are often eaten with bread, which is a classic combination, and serving them this way makes it easy to overdo the portion size. In the salad, however, their quantity is controlled, and they taste exquisite in such a combination. Simply combine them with cooked small pasta and vegetables. Add some dressing. Such a salad is ideal to eat, for example, before watching a film. During the screening, other snacks won’t tempt you.
Salad with kabanos sausages
Ingredients:
- 140 g cooked small pasta
- 115 g kabanos sausages
- 3-4 tablespoons canned sweetcorn
- 3-4 tablespoons canned red beans
- 8 cherry tomatoes
- A few sprigs of parsley
- Half an avocado
- 4 tablespoons olive oil
- Lime or lemon juice
- Salt, pepper, and paprika to taste
Preparation:
- Add the sliced kabanos sausages to the cooled pasta.
- Add the beans and sweetcorn.
- Then add the cherry tomatoes, halved.
- Cut the avocado into small pieces, drizzle with lime or lemon juice, and add to the salad.
- Include finely chopped parsley.
- Finally, add olive oil mixed with lime or lemon juice and season with spices.
