Today, we present you with a recipe for the royal cheesecake, which stands out due to its simplicity and unique aroma. This dessert will undoubtedly win the hearts of all sweet lovers!

Cheesecake is one of those cakes that can delight both in taste and appearance. It is one of the most beloved desserts, available in many varieties and flavours. Moreover, cheesecake has its holiday, celebrated on 30 July. The classic cheesecake is made from quark cheese, ideally semi-fat, which is worth grinding oneself to achieve the perfect consistency. Today, we propose a royal cheesecake recipe consisting of a cheese mixture enriched with vanilla and chocolate dough. This combination makes the royal cheesecake a real treat for the palate.

How to make royal cheesecake?

Preparing the royal cheesecake is not tricky; the final result will impress your guests. Here is the list of ingredients and a detailed recipe:

Ingredients for the cheese mixture:

  • 200 grams of sugar,
  • 6 eggs,
  • 1 kilogram of semi-fat quark cheese,
  • 2 tablespoons of potato starch,
  • teaspoon of vanilla essence or a package of vanilla sugar (16 grams),
  • 200 grams of butter.

Ingredients for the chocolate dough:

  • 100 grams of sugar,
  • 200 grams of butter,
  • 2 tablespoons of cocoa,
  • 5 egg yolks,
  • 320 grams of all-purpose flour,
  • 1.5 teaspoons of baking powder.

Preparation of the royal cheesecake:

Step 1: Preparing the chocolate dough

  1. Sift the flour onto a pastry board, and add cold butter, cocoa, egg yolks, baking powder, and sugar.
  2. Quickly knead the dough, then divide it into two parts—one larger (about two-thirds of the dough) and the other smaller (about one-third of the dough).
  3. Wrap both pieces of dough in plastic wrap and place them in the freezer for at least 30 minutes.

Step 2: Preparing the cheese mixture

  1. Grind the quark twice in a meat grinder or press it through a sieve to smooth the mixture.
  2. Melt and cool the butter.
  3. Separate the egg whites from the yolks. Beat the egg whites until stiff peaks form.
  4. In a separate bowl, beat the yolks with sugar and vanilla essence until a light cream forms.
  5. Add the potato starch to the whipped yolks and gradually add the cheese, mixing continuously.
  6. Finally, gently fold the egg whites using a spoon or a mixer at the lowest speed.

Step 3: Assembling the cheesecake

  1. Line a baking tray with parchment paper.
  2. Grate the more significant part of the chocolate dough on a large grater and spread it evenly on the bottom of the tray.
  3. Spread the cheese mixture over the layer of dough.
  4. Grate the minor part of the chocolate dough and sprinkle it over the top of the cheese mixture.

Step 4: Baking the cheesecake

  1. Place the cheesecake in an oven preheated to 180°C.
  2. Bake for about 1 hour and 15 minutes until the cheesecake turns golden and is well-baked.
