Roasted cauliflower with cheese sauce
Say goodbye to overcooked cauliflower; this roasted version is far superior. It retains a slight crunch, deliciously enveloped in a cheese sauce. It's the ultimate autumn comfort food, sneaking in a substantial serving of vegetables. The sauce alone is so tasty that it's hard to resist sampling from the pot. Together with the cauliflower, it becomes even more delightful.
When it appears on the table, everyone is wide-eyed. It looks stunning, and on top of that, tastes so good that there are often squabbles over the last piece. Fortunately, it's quick to make, so an extra serving can be prepared if needed.
Ingredients:
- 1 cauliflower.
Cheese Sauce:
- 1.5 tablespoons plain flour,
- 3.5 tablespoons butter,
- 480 millilitres milk,
- pepper to taste,
- a pinch of nutmeg,
- 150 grams cheddar cheese.
Instructions:
Step 1. Remove the leaves from the cauliflower. Boil it whole in salted water for 5 minutes, with the florets facing down.
Step 2. Transfer the cauliflower to a baking dish. Drizzle generously with olive oil, season with salt, and place in an oven preheated to 200°C (392°F) for 40 minutes.
Step 3. Meanwhile, prepare the cheese sauce. In a pot, melt the butter, add the flour and mix. While stirring constantly, add the milk. Add nutmeg, pepper, and grated cheese. Heat until the cheese melts, forming a thick sauce.
Step 4. Pour the hot cheese sauce over the roasted cauliflower. Sprinkle with chopped parsley, and it's ready. Enjoy!
