Quick apple frittata: A 5‑minute sweet twist on dessert

The flavour is perfectly balanced thanks to the natural sweetness of the apples and a delicate hint of cinnamon added to the batter.

Apple pie omelette - recipe for a sweet frittata

Frittata is the Italian version of an omelette, thicker and more hearty. The apple version is a delicious and simple dessert that works perfectly for breakfast, a snack, or dinner. It's a great alternative to traditional apple pies. Frittata is easy to prepare, and you likely have most of the ingredients in your kitchen already.

Instead of sugar, you can use honey or maple syrup. You can decorate the frittata with whipped cream, fruit sauce, or sprinkle it with icing sugar.

Ingredients:

  • 2–3 medium apples (preferably a firm and juicy variety),
  • juice from half a lemon,
  • 1 teaspoon cinnamon,
  • 3 eggs,
  • 2 tablespoons sugar,
  • about 150 millilitres of plain yogurt,
  • about 60 grams of plain flour,
  • butter for frying.

Instructions:

  1. Peel the apples, cut them into thin slices, and place them in a bowl. Drizzle with lemon juice, sprinkle with cinnamon, and mix thoroughly.
  2. Let them sit for a while to blend the flavours.
  3. In a separate bowl, beat the eggs with the sugar until fluffy. Add yogurt and flour, and gently mix.
  4. Finally, add the apples and gently mix again.
  5. Heat a bit of butter in a pan (about 20 centimetres in diameter). When hot, pour in the prepared mixture.
  6. Cook on low heat, covered, for 10 minutes.
  7. Gently flip the frittata to the other side (you can use a plate or lid) and cook for another 5 minutes.
  8. Transfer the finished frittata to a plate and cut it into pieces.

You can store the frittata in the refrigerator for 1–2 days, wrapped in foil or in an airtight container. It can be reheated in a pan or microwave before serving.
