  • puff pastry (1 package),
  • pumpkin purée (7 oz),
  • brown sugar (3 tablespoons),
  • cinnamon (1 teaspoon),
  • gingerbread spice (1 teaspoon),
  • egg (1 piece),
  • walnuts (a handful, optional).

Method:

  1. Unroll the puff pastry and cut it into long strips. Mix the pumpkin purée with brown sugar, cinnamon, and gingerbread spice.
  2. Spread a thin layer of pumpkin filling on the pastry strips, sprinkle with chopped walnuts, and twist the strips into a spiral shape.
  3. Place on a baking tray lined with baking paper, and brush the tops with beaten egg.
  4. Bake at 200°C (392°F) for 15-20 minutes until the cookies are golden and crispy.
