  • 250 grams of flour,
  • 3 eggs,
  • a handful of walnuts,
  • 200 grams of fine baking sugar,
  • 120 millilitres of oil,
  • 2 teaspoons of cinnamon,
  • 1 teaspoon of baking soda,
  • 16 grams of vanilla sugar,
  • 1-2 ground cloves,
  • a handful of raisins,
  • 250 grams of pumpkin pulp (from one medium pumpkin).

Instructions:

  1. Preparing the pumpkin: Peel the pumpkin, remove the seeds and fibres. Then grate or blend it.
  2. Egg mixture: Beat the eggs with sugar into a fluffy mass. Add oil and mix thoroughly.
  3. Dry ingredients: In a separate bowl, combine flour, baking powder, baking soda, cinnamon, cloves, and salt.
  4. Combining ingredients: Gradually add the dry ingredients to the egg mixture, gently mixing.
  5. Additions: Add the grated pumpkin, raisins, and chopped walnuts to the batter.
  6. Baking: Transfer the batter to a baking dish lined with parchment paper. Bake in the oven preheated to 180°C for about 45 to 50 minutes.
  7. Finishing: After cooling, sprinkle the cake with icing sugar.

  • Experiment with spices: Besides cinnamon and cloves, you can add other spices like ginger, nutmeg, or cardamom to the cake.
