Mushroom savour: A twist on classic pork chops

Although the mushroom season arrived later than usual this year, it was abundant in harvests. It's worth incorporating these aromatic fruits of the forest into various dishes. A creative idea for a mushroom dinner is rolled pork chops. You can prepare them in four simple steps.

Even enthusiasts of traditional flavours occasionally tire of classic pork chops. So, how can you maintain the reliable components of a dinner while adding a small and tasty twist? Simply turn to seasonal specialities.

Which mushrooms are suitable for dinner?

Various types of mushrooms work well for rolled pork chops. You can use porcini, boletes, birch boletes, slippery jacks, and even parasol mushrooms. If you have a mix of forest mushrooms in your basket, feel free to use them.

You can also make pork rolls with frozen or dried mushrooms. However, if you use dried mushrooms, you must soak them first.

Rolled pork chops with mushrooms

Rolled pork chops with mushrooms are an excellent choice for gourmet lovers. They are perfect for those looking to change from classic cutlets.

Ingredients

  • 5 slices of boneless pork loin,
  • 400g forest mushrooms,
  • 2 tablespoons cooking oil,
  • 2 medium-sized onions,
  • dried or fresh thyme,
  • 60g flour,
  • 2 teaspoons salt,
  • 1 teaspoon pepper,
  • 100ml vegetable broth.

Preparation Method

  1. Preparing the mushrooms for rolls: Clean the forest mushrooms of sand using a small brush. You can gently rinse them under running water, but not for too long, to prevent excessive absorption. Heat oil in a pan and sauté the onions, chopped into small pieces. When the onions become translucent, add the mushrooms and fry them under the lid for 10 minutes.
  2. Assembling the mushroom rolls: Pound the meat into cutlets. Sprinkle with salt and pepper on both sides. Place the filling in the middle, leaving a margin of about 2.5cm. Roll the cutlets and secure them with a toothpick.
  3. Frying the pork rolls with mushrooms: Heat the oil in the pan again. Coat the rolls in flour and quickly fry them on both sides to lightly brown them and prevent them from breaking apart during baking.
  4. At the bottom of a baking dish, spread the remaining mushrooms from the pan. Place the rolls on top and pour in the broth. Bake in an oven preheated to 180 degrees Celsius for 20 minutes covered, and then for another 5 minutes uncovered.

Serve rolled pork chops with mushrooms alongside potatoes, gnocchi, and your favourite slaw. They taste great with red cabbage or stewed white cabbage.
