Delicate cookies are commonly associated with pre-holiday preparations, but in this version, they taste best at any time of the year. Their uniqueness lies in the addition of lime cream, which cuts through the sweet dough and introduces a refreshing note. Additionally, they look incredibly appetising, enticing any sweet tooth.
Delicate cookies with lime cream
There's certainly a lot happening with these cookies. We have a sweet base, cream cheese filling, and a dollop of lime mousse. This trio is simply irresistible. Since discovering this recipe, regular delicate cookies have taken a backseat.
Ingredients:
Lime Mousse:
- 100 grams of sugar,
- 60 millilitres of lime juice,
- 2 teaspoons of lime zest,
- 2 eggs,
- 30 grams of butter,
- green food colouring (optional).
Cookies:
- 200 grams of softened butter,
- 150 millilitres of vegetable oil,
- 150 grams of powdered sugar,
- 200 grams of sugar,
- 1/2 teaspoon of baking soda,
- 2 teaspoons of salt,
- 1 teaspoon of baking powder,
- 60 millilitres of 18% cream,
- 2 eggs,
- 1 teaspoon of vanilla extract,
- 625 grams of all-purpose flour.
Cream Cheese Frosting:
- 225 grams of cream cheese,
- 115 grams of butter,
- 300 grams of powdered sugar,
- 2 teaspoons of vanilla extract.
Instructions:
Step 1. Start with the lime mousse. Beat the eggs until light in colour. In a saucepan, add the sugar, lime juice, and zest (remember to scald the fruit). Begin to heat everything, add the beaten eggs, and mix thoroughly. Add a few drops of food colouring and butter, combining everything into a smooth mixture.
Step 2. Proceed to prepare the cookies. In a bowl, place softened butter, powdered sugar, regular sugar, and vegetable oil, and combine using a mixer. Gradually add the eggs, continuing to mix. Add the vanilla extract, cream, baking soda, salt, baking powder, and flour, and combine everything.
Step 3. Use an ice cream scoop to portion the dough and place it on a baking sheet lined with parchment paper.
Step 4. Flatten the cookies using a glass. Place in a preheated oven at 180 degrees Celsius for 12 minutes.
Step 5. Meanwhile, prepare the cream cheese frosting. Place the cream cheese in a bowl and mix with softened butter, powdered sugar, and vanilla extract.
Step 6. Spread the cream cheese frosting on the cooled cookies and add a dollop of lime mousse. Decorate with a piece of lime. Enjoy!
