Lemon cake with courgette
Ingredients:
- 310 grams of wheat flour,
- 1 cup of grated courgette,
- 225 grams of caster sugar,
- 100 millilitres of buttermilk,
- 100 millilitres of olive oil,
- 1 lemon,
- 2 eggs,
- 2 teaspoons of baking powder,
- 1/2 teaspoon of salt,
- additionally: butter.
Instructions:
- Grate the lemon zest and squeeze the juice from half of the fruit. Wash the courgette and grate it as well. Ensure all ingredients are at room temperature.
- Crack the eggs into a bowl. Add olive oil, sugar, buttermilk, lemon juice, and zest.
- Next, add the separately mixed baking powder, flour, and salt to these ingredients. Finally, add the courgette. Mix until all ingredients are combined.
