Classic yeast pancakes are made from a yeast-based dough, often with juicy apples added, giving them a unique taste and aroma. What do you need to prepare them, and how do you make them? The recipe is below.

For the basic version of them, you need plain flour, milk, eggs, sugar, yeast, and a pinch of salt. If you want the pancakes to be more aromatic, you can also add vanilla sugar and a bit of cinnamon.

What do you need to make yeast pancakes?

Ingredients:

  • 500g plain flour
  • 25g fresh yeast
  • 240ml warm milk
  • 2 medium eggs
  • 50g sugar (about 4 tablespoons)
  • 1 sachet of vanilla sugar (about 15g)
  • A pinch of salt
  • 2-3 medium apples, peeled and diced
  • 1 teaspoon cinnamon
  • Oil for frying
  • Optional: icing sugar for dusting

How do you make the dough? To prepare the dough for yeast pancakes, start by dissolving the fresh yeast. Crumble it into a small bowl, add a teaspoon of sugar and flour, then pour in 60ml of warm milk, and let it sit in a warm place for about 15 minutes to activate. Meanwhile, in a larger bowl, place the sifted flour, salt, remaining sugar, and vanilla sugar. Pour in the activated yeast and the rest of the warmed milk, then add the eggs and a bit of oil.

Mix all the ingredients thoroughly, preferably using a mixer with a dough hook, to achieve a smooth, homogeneous mass. Finally, add the diced fresh apples, gently mixing them into the dough. Cover the prepared dough with a cloth and set it in a warm place for about 1 hour to let it rise and double in volume.

How to fry yeast pancakes? Heat oil in a pan. Use a spoon to scoop portions of the dough and place them into the hot oil. Fry on medium heat on both sides until golden brown.

Take care not to scoop too much dough at once, as the pancakes can stick together. Place the fried pancakes on a plate lined with paper towels to remove excess oil.

If you want to vary the flavour of pancakes, you can substitute the apples with other fruits like pears, plums, bananas, or even some dried fruits.

What to remember when frying yeast pancakes?

When preparing pancakes, it's worthwhile to keep some basic principles in mind that can affect the final taste and appearance. Avoid common mistakes such as frying at too low a temperature, which causes them to become greasy and unappetising. Also, do not forget the proper dough rising time – this is what is responsible for the fluffiness and tenderness that is so highly valued in this dish.
