I love homemade sweets that are easy to make and have fewer calories than their store-bought counterparts. This time, a dessert made in a loaf tin is simply delightful in taste.

Skyr has been growing in popularity among fans of homemade treats for a while now. This is due to its exceptional nutritional value and excellent taste. It is perfect for pancakes but works well in light desserts or low-calorie cakes. In the form of bars, it will also be great.

Why you should eat skyr

Skyr, a traditional Icelandic cheese, stands out among other dairy products due to its high protein content. Even a small portion provides a significant amount of needed protein, which benefits people who exercise and maintain a healthy diet. Additionally, skyr is low in fat, making it a worry-free addition to your diet in terms of extra calories. Moreover, skyr is also rich in calcium, which supports bone health, and B vitamins, which are essential for the body’s proper functioning.

Heavenly dessert with skyr

Thanks to its neutral, slightly tart note, skyr pairs perfectly with the intense flavour of chocolate. Desserts with added skyr and chocolate can be both delicious and healthy.

Ingredients:

  • 70 grams crystal clear jelly,
  • 400 grams skyr,
  • 100 grams dark chocolate with a minimum of 90% cocoa content.

Preparation:

  1. Dissolve the jelly in 150 ml of water. Set aside to cool.
  2. When the jelly thickens (but is still somewhat runny), blend it in batches with skyr.
  3. Transfer the mixture to a 23-centimetre loaf tin. A silicone tin is best, or alternatively, line another type with cling film. Set it aside overnight to solidify.
  4. Melt the chocolate in the microwave or a water bath.
  5. Cut the skyr mixture into pieces and dip them in the chocolate. Place on a cooling rack or baking paper.
