Recipe for lotus cookies with cream
How do you make Lotus cookies? It's not particularly difficult or complicated. You just need to combine three ingredients and have a bit of patience while they bake.
You can further enhance them by adding a teaspoon of "speculoos" spice mix, which you can prepare by combining 1/2 teaspoon ground cinnamon, 1/4 teaspoon ground ginger, and 1/4 teaspoon ground cloves. You can buy almond flour ready-made or finely grind almonds at home.
Ingredients:
- 1/2 cup peanut butter,
- 1/3 cup maple syrup,
- 1 cup almond flour.
Filling:
- 1/4 cup peanut butter,
- 2 tablespoons maple syrup.
Preparation:
Step 1. Transfer the peanut butter to a bowl, add the maple syrup and almond flour, and mix thoroughly.
Step 2. Form balls from the mixture and place them two at a time next to each other. Flatten them with a fork and put them in an oven preheated to 180°C for 10 minutes.
