Homemade granola: A quick, nutritious breakfast solution

I have always believed that most breakfast ideas described online by popular nutritionists, celebrities, singers, and actors are wishful thinking for many of us. Blending red onions and peeled garlic cloves with avocado to create guacamole is great, but I'll only find time to prepare it in the morning at most once a week. On the other days, I need something much simpler and quicker for breakfast yet still tasty and nutritious. Abiding by this principle finally led me to granola.
What exactly is granola? It is a mix of baked nuts, flakes, and dried fruits. In other words, it is a highly nutritious combination of protein, healthy fats, vitamins, and minerals, providing a long-lasting feeling of fullness and a powerful morning energy boost. Once we have it, for breakfast, we need to pour a handful of granola with milk or yoghurt (or skyr and other such products) to get a valuable meal that effectively sets us up for a good part of the day.
Discovering granola turned out to be perfect for me. The problem was that the composition of store-bought mixes did not always suit me. Homemade granola
Ingredients:
- ½ cup of almonds
- ½ cup of walnuts
- ½ cup of hazelnuts
- ¼ cup of pumpkin seeds
- 2 cups of rolled oats
- ½ cup of dried cranberries
- ½ cup of dried apricots
- ½ cup of honey or maple syrup
- ¼ teaspoon of cinnamon
Method:
- Place all the nuts, seeds, and oats in a bowl. Add half a cup of honey and cinnamon, and mix.
- Spread the mixture on a baking tray lined with baking paper.
- Bake for 25 minutes at 170°C, stirring the contents every 10 minutes.
- Allow to cool, then break into pieces. Add dried fruits, mix, and transfer the whole mixture into a clean and sterilised jar. Ready!
