Homemade alfajores: A taste of Argentina in your kitchen

Crumbly alfajores biscuits
Alfajores consist of two round, slightly sweet crumbly biscuits. Between them is a sweet filling, most often made with dulce de leche. Add a light sprinkle of coconut flakes, and you can enjoy the crunch.

Ingredients:
- 200g plain flour,
- 300g potato starch,
- 200g butter,
- 2 teaspoons baking powder,
- 3 egg yolks,
- 100g sugar,
- 1 teaspoon vanilla extract.
Other ingredients:
- 200g dulce de leche,
- 1/2 cup coconut flakes.
Instructions:
Step 1. Cream the butter with sugar until fluffy and light. Add the egg yolks and vanilla extract, and mix well.
Step 2. Add the potato starch, plain flour, and baking powder. Knead the dough until uniform, wrap it in cling film, and refrigerate for 2 hours.
Step 3. Divide the dough into two parts. Roll it out and cut out circles. Place them on a baking sheet lined with parchment paper and bake in the oven preheated to 180 degrees Celsius for 10 minutes. Do the same with the remaining dough.
Step 4. Spread one biscuit with dulce de leche and cover with another. Roll the edges in coconut flakes. Alfajores are ready to be enjoyed. Savour them!
