Golden slaw recipe: Turning humble cabbage into a dinner sensation

A delicious slaw is the key to dinner success. However, it doesn't take much to delight your household with an addition that also provides them with a solid portion of vitamins and nutrients. Golden slaw with sauerkraut and carrots is an absolute classic that’s worth reaching for, not only when fried fish is for dinner. With simple additions, it turns into a snack that is hard to resist.
Slaw with sauerkraut and carrots
My grandmother used to make this slaw. I used to wonder why she made such a big bowl. It turns out it was just caution because the slaw is so delicious that half of it would disappear before dinner.
Slaw with sauerkraut is a great addition to a healthy diet. It is low in calories and full of dietary fibre, stimulating the intestines and providing a feeling of fullness. It is also a source of vitamins (including A, E, K, and those from the B group) and minerals (including magnesium, potassium, iron, and calcium). Such an addition to dinner takes care of a youthful appearance and better well-being and dramatically strengthens immunity and helps lose a few pounds.
Caraway seeds, when added to dishes, especially those that are hard to digest, have a beneficial effect on the digestive system. Added to cabbage, they reduce the risk of bloating. However, if you don't like their taste, you can safely skip this addition.
Ingredients:
- 500 g sauerkraut,
- 250 g carrots,
- 1-2 apples,
- 1 tablespoon lemon juice,
- 5 tablespoons rapeseed oil,
- 1/2 teaspoon ground caraway seeds,
- a pinch of freshly ground pepper,
- salt and sugar to taste.
Preparation:
- Thoroughly squeeze the sauerkraut to remove excess juice. If it is too sour, you can briefly rinse and squeeze it again.
- Chop the cabbage into small pieces.
- Peel the carrots and grate them on a fine grater.
- Peel the apple, remove the core, and grate it on a coarse grater.
- Drizzle the apple with lemon juice to prevent it from darkening.
- Combine the chopped cabbage with the grated carrots and apple.
- Season with caraway seeds, pepper, salt, and sugar to taste.
- Drizzle with rapeseed oil and mix thoroughly.
Set aside the prepared slaw for an hour to let the flavours meld. Enjoy!
