Georgian-style cheese: A refreshing summer snack guaranteed to please

On party tables, salads play an important role. In the summer, however, I choose something completely different – delicious Georgian-style cheese. All the guests will eagerly reach for such a snack.

When I don't have much time for cooking, this recipe immediately solves the problem. Cottage cheese served this way transforms from a breakfast dish into a simple snack. Sometimes, you don't need many ingredients or a complicated preparation method to whip up something delicious.

Georgian-style cheese

Georgian-style cheese is a simple yet very tasty recipe that works perfectly as an appetiser. The possibility of modifying the ingredients, for instance, using smoked cheese instead of some the cottage cheese, allows for creativity and discovering new flavours. I don't know anyone who didn't ask me for this recipe after trying it.

It tastes best right out of the fridge – it's fresh and makes a great snack for warm days. It’s also perfect for grilling – I don’t know of a better addition to grilled meats. You need to plan the preparation a bit earlier because the cottage cheese should spend 24 hours in a brine solution.

Ingredients:

  • 800 grams fat white cheese in a block,
  • 3 pickles,
  • 2 onions (one white, one red),
  • parsley.

Brine

  • about 1 litre of water,
  • 3 tablespoons soy sauce,
  • 1 tablespoon salt.

Sauce

  • 200 grams of mayonnaise,
  • 350 grams of 18% sour cream,
  • 3 tablespoons soy sauce,
  • 5 cloves of garlic.

Preparation method:

  1. Cut the cheese into slices 1-1.5 centimetres thick and place them in a bowl.
  2. Prepare the brine from the water, soy sauce, and salt. Gently pour it over the cheese and refrigerate for 24 hours.
  3. Mix the mayonnaise, sour cream, soy sauce, and garlic pressed through a garlic press.
  4. Drain the cheese from the brine, wait a few minutes, and pour the prepared sauce over it.
  5. Dice the pickles and onions, chop the parsley, and sprinkle them over the cheese.

You can replace part of the mayonnaise with natural yoghurt if you want the Georgian-style cheese to be lighter. It tastes best when chilled. Enjoy your meal!
