With just a few basic ingredients that you usually have in your kitchen, you can create a bake resembling a combination of delicate cheesecake and airy sponge cake. Ingredients:

  • 450g natural yoghurt (room temperature),
  • 5 eggs (room temperature),
  • 60ml vegetable oil (e.g., rapeseed oil),
  • 85g vanilla pudding mix or potato starch,
  • 100g sugar,
  • 2 tablespoons lemon juice,
  • a pinch of salt.

Preparation:

  1. Line a 23cm pan with baking paper. Additionally, secure the bottom with aluminium foil.
  2. In one bowl, combine yoghurt, egg yolks, oil, and pudding mix. In another bowl, beat the egg whites with a pinch of salt until stiff, gradually adding sugar while continuing to beat. Finally, add lemon juice and gently mix.
  3. Gently fold the egg white mixture into the yoghurt mixture using a spatula.
  4. Pour the batter into the prepared pan. Place it into a larger pan, then pour boiling water into the larger pan up to halfway up the height of the smaller pan. Bake at 180°C for about 30-40 minutes or until a toothpick comes out clean.
  5. After baking, leave the cake in the pan to cool completely.

The basic yoghurt cake recipe is quite simple, but you can modify it according to your preferences. Try adding to the cake:

  • fruits: Fresh fruits (e.g., blueberries, raspberries, strawberries) or dried (e.g., cranberries, sultanas) will add sweetness and aroma to the cake.

  • spices: Cinnamon, cardamom, or nutmeg will give the cake a festive character.
