Ingredients:
- 450g natural yoghurt (room temperature),
- 5 eggs (room temperature),
- 60ml vegetable oil (e.g., rapeseed oil),
- 85g vanilla pudding mix or potato starch,
- 100g sugar,
- 2 tablespoons lemon juice,
- a pinch of salt.
Preparation:
- Line a 23cm pan with baking paper. Additionally, secure the bottom with aluminium foil.
- In one bowl, combine yoghurt, egg yolks, oil, and pudding mix. In another bowl, beat the egg whites with a pinch of salt until stiff, gradually adding sugar while continuing to beat. Finally, add lemon juice and gently mix.
- Gently fold the egg white mixture into the yoghurt mixture using a spatula.
- Pour the batter into the prepared pan. Place it into a larger pan, then pour boiling water into the larger pan up to halfway up the height of the smaller pan. Bake at 180°C for about 30-40 minutes or until a toothpick comes out clean.
- After baking, leave the cake in the pan to cool completely.
